It is NOT possible to capture funnels changes related to User Experience Analytics in Update sets. The only way is to recreate them again on a new instance. We understand that this is involved additional manual activity but unfortunately, this is a limitation of the product. However, this would be a great candidate for an enhancement or idea request to be implemented in future releases.
